If you like eating eggs salads, they don’t have to be off limits on the keto diet. You can still make them high fat, low carb and not worry about breaking your diet.
The easiest way to make keto egg salad is to take your peeled hard boiled eggs and put them in a bowl with your favorite Sir Kensington fabanaise and mustard, lemon juice, celery along with green onions and seasonings you like. Store in fridge for a few hours and then take out and enjoy.
I really like the Sir Kensington products because they use aquafaba (The water from chickpeas) and it tastes just like the mayo and mustard you typically buy.
