You’ve probably heard of the group Black Eyed Peas and their hit songs like “I Gotta A Feeling” but did you know black eyed peas are also a vegetable! Whoa! So what makes them great? Do you eat them?
For me, Southern tradition dictates that eating black eyed peas and collard greens brings you good luck and wealth through the year if eaten the first day of the year—aside from actually liking both veggies, this tradition is a bonus so why not partake in it. Read more about the tradition here:

Not only our black eyed peas plentiful in protein when eaten in the right quantity but also full of potassium so those of us who don’t like bananas have an option here. Also, since they are complex carbs, they will take longer to digest so because of their fiber content you’ll feel full longer too. Plus, you can fry, bake, saute them too so there is a way to prepare them so that you like them. Personally, I look forward to eating them each year and just like the taste of them.
