Vitamin C from bread waste?

I recently read an article that I thought was interesting. A group of scientists has found a way to take bread that is food waste and via some processing convert it into a compound that could be used to make Vitamin C. Most vitamin C that people see in products is synthetic and we rely heavily on its availability based on what is in stock in China so this solution would be pretty innovative to tackle a problem, right?

Hopefully, this work continues and the scientists are able to scale-up and make this a reality but this is a promising start. Innovation often comes from food waste and this is just another way we can help our planet and environment. Sustainability can be achieved in multiple ways and these scientists proved it with this out of the box thinking.
