I was reading an interesting article about food texture and it got me to thinking if I buy food because of the way it feels. Does your purchase decision have to do with taste and texture and price or is it something else that makes you buy the product?
Think about this, if you buy a pancake and it isn’t soft and warm with the right amount of fluff, would you buy it? The altered texture may make it less appealing right? The perceived texture is something that we have adapted to as we have grown up from childhood. A strawberry should feel and taste a certain way so altering the texture may be off-putting to someone. However, would you consider buying something that healthy like gluten-free bread if the texture was identical to regular bread?
Considering that plant-based alternatives exist today, wouldn’t it make sense to alter the texture and taste of those items that we should be eating more of what we don’t? Your answer likely depends on whether you believe science should be invading your kitchen and body or not. I’m sure we haven’t heard the last of this debate of making good for you food or healthy clean food but is lab-grown or altered food really something that we need today to stay healthy?
